Ingredients:

- 1 can (15 oz.) cannellini beans drained and rinsed

- 2 cups shelled, cooked edamame (thawed, if frozen)

- 3 tablespoons olive oil

- 1/4 cup Locatelli cheese, grated

- 1/4 cup water

- 1 teaspoon kosher salt

- 5-6 sprigs of fresh basil

Instructions:

Place the cannellini beans, edamame, tahini, garlic, water, lemon juice, salt, and 1 tablespoon olive oil in a food processor (in the pictures, I am using a hand held version).

 

Start to blend ingredients while drizzling the remainder of the olive oil into the processor to create an emulsification.

 

Process until smooth, scraping the sides of the bowl as needed. Season with black pepper and continue to process until incorporated. Check consistency of dip. Add more water or olive oil as needed to achieve the desired texture. Transfer the prepared dip into a serving bowl and mix in chopped basil. Serve with spiced pita chips.

Spiced Pita Chips

Yield: 32 chips

Ingredients:

- 4 pitas cut into 8 triangle wedges

- olive oil, drizzled as needed

- sea salt, to taste

- ground cayenne pepper, to taste

Instructions:

Preheat oven to 400 degrees F.  Spray 1-2 baking sheets with nonstick spray. Lay the pitas in an even layer without overlapping.

Lightly drizzle olive oil evenly over all the chips. Sprinkle them with sea salt and cayenne as desired.

Bake for approximately 5 minutes or until golden brown.
